Nature on the p(a)late

The concept of our cuisine is: There is no concept. Because nature determines what arrives on the plate. The dishes are inspired by what is available in the winery and on the farms of our partners. What vegetables are ripe for harvesting at the moment? How many eggs have the chickens laid today? Which animal was slaughtered?

In close cooperation with Maximilian Feichter, who is responsible for the farm aspect of the winery, chef Flora Hohmann creates her menu in tandem with the garden planning. Her cuisine shows with great clarity what grows and lives here directly on site. Agriculture and gastronomy go hand in hand. The vegetables you find on your plate were still in the ground in the garden two hours earlier.

Flora grew up in the midst of meadow orchards on the Upper Bavarian Ammersee. Even as a child she cooked and baked her own bread. After her culinary training, she had the chance to creatively evolve as a chef in the wine bar Walter and Benjamin and began to engage with the interplay of wine and good food. After her studies at the Slow Food University in Pollenzo, she managed the Tantris Natural Winebar in Munich and has since supported several farm-to-table projects as a culinary curator.

Everything has a value

It is important to us to use food as holistically as possible. All the meat from our animals is processed, from shoulder to loin, from house sausage to pâté. Vegetables and fruit that we have in surplus and do not need for our daily restaurant business are not thrown away, but boiled down, pickled, dried or fermented. For this purpose, the Alois Lageder Winery has set up its own manufacturing facility.
